Made with carefully selected eel

We use safe, secure, and high-quality Japanese eels, which have been eaten since the Edo period and are raised in carefully selected eel farms overseas and have passed inspections that are said to be stricter than those for domestically produced eels.Our carefully raised eels are 1.5 to 2 times larger (in grams) than the half eel or whole eel sold at regular eel restaurants.

Carefully selected eel sauce

We blend Kyushu's tamari soy sauce with Kanto's special dark soy sauce, mix in mirin, granulated sugar, honey, grated fruit, etc., simmer over low heat, turning off the heat just before boiling, letting it cool, and then simmering again until just before boiling...by repeating this process several times, we give the sauce richness and depth.
